When life hands you lemons…make something out of it.
Make the best out of a sour situation. Isn’t that what we are taught? Well, unfortunately for me, I don’t handle difficult situations very well. Coping mechanisms come in all shapes and sizes and mine, to be honest, is baking. On those crummy (pardon the pun) days, I find that there is something oddly soothing about being in control of simple ingredients that, through simple methodology, can bring joy to those around me.
God did not give me a single sweet tooth so I ultimately end up sharing the finished product. There is something incredibly satisfying about taking a sour circumstance, creating a scrumptious product and watching loved ones enjoy. On exceptionally sour days, there are few things more comforting than a savory pie. Pie has the ability to bring out the sentimental side in any baker. Whether it be a grandmother’s recipe, or memories of summer apple pie at the lake, pies have the ability to melt the heart of those who don aprons. A pie is made with others in mind – carved in heartfelt slices to be shared and enjoyed with great company.
So, I made this lemon meringue pie this weekend.
